Job Overview & Responsibilities

The role is to support the Administrator and Consulting Dietitian in managing the Dietary Department. You will ensure compliance with federal, state, and local regulations while maintaining high-quality nutritional services in a clean and safe environment.

Major Duties and Responsibilities

Administrative & Departmental Management
  • Oversee the Dietary Department, including planning, policy development, budgeting, staffing, and regulatory compliance.
  • Coordinate with other departments (Nursing, Housekeeping, Social Services, etc.) to ensure seamless dietary services.
  • Maintain records, reports, and compliance with health and safety regulations.
Resident Nutrition & Care
  • Assess dietary needs, create meal plans, and ensure compliance with physician orders.
  • Monitor residents' food preferences and quality of meals.
  • Collaborate with families and staff to develop individual nutrition plans.
Quality Assurance & Compliance
  • Conduct inspections, oversee sanitation, and ensure adherence to infection control protocols.
  • Address dietary deficiencies and participate in regulatory surveys.
  • Develop and implement quality assurance programs.
Personnel & Staff Development
  • Recruit, train, and supervise dietary staff.
  • Schedule work shifts, evaluate performance, and enforce policies.
  • Provide ongoing education and leadership training.
Safety & Sanitation
  • Ensure a clean and safe environment for food preparation and storage.
  • Monitor infection control and safety procedures.
  • Conduct fire and disaster preparedness drills.
Budgeting & Inventory Management
  • Assist in budget planning for food, equipment, and labor.
  • Manage inventory, ordering, and vendor relations.
  • Implement cost-control measures to prevent waste.
Committee Participation & Compliance
  • Serve on facility committees (Infection Control, Quality Assurance, Budget, etc.).
  • Provide reports and implement recommendations for dietary improvements.
Resident Rights & Grievance Handling
  • Ensure confidentiality and resident satisfaction with dietary services.
  • Address complaints and maintain records of actions taken.

This role ensures high-quality dietary services, resident nutrition, regulatory compliance, and efficient department operations.

Education

• Must possess, as a minimum, a high school diploma.
• Be a graduate of an accredited course in dietetic training approved by the American Dietetic Association.

Experience

• Must have, as a minimum, two (2) years experience in a supervisory capacity in a hospital, skilled nursing care facility, or other related medical facility.
• Must have training in cost control, food management, diet therapy, etc.

Qualifications & Skills
  • Must be a registered Food Service Director in the state.
  • Strong knowledge of dietary practices, regulations, and guidelines in long-term care.
  • Ability to make independent decisions and handle sensitive situations tactfully.
  • Leadership skills to supervise both professional and non-professional staff.
  • Competency in planning, organizing, and implementing dietary programs and policies.
  • Ability to read and interpret financial and dietary reports.
  • Must be at least 23 years old and proficient in English (reading, writing, and speaking).
  • Strong management skills
Personal & Professional Attributes
  • Must be patient, tactful, and enthusiastic when dealing with residents.
  • Open to learning and implementing new dietary methods and principles.
  • Maintain cleanliness, safety, and order in dietary service areas.
  • Capable of effectively communicating residents' dietary needs and conditions.
Physical & Sensory Requirements
  • Must be able to move around the facility intermittently throughout the day.
  • Ability to handle mental and emotional stress, as well as work with elderly and emotionally distressed individuals.
  • Must have functional sight and hearing (with or without prosthetics).
  • Ability to lift, push, or move equipment over 50 pounds and assist in resident evacuations if needed.
